Rustic Chicken Recipe
There is something very satisfying about a rustic meal of chicken and potatoes. Pairing a Joseph Phelps Pinot Noir with this dish will enhance the smoky, savory bacon in the potatoes and bring out the earthy floral notes of the wine. Together, they work in harmony with the chicken for a very satisfying dish on a cold night.
Rustic Home-Style Chicken
4 Organic boneless, skin on chicken breasts - approx. 6oz each
3 Cloves garlic
1 Stick of butter
1lb Baby marbled potatoes
6oz Thick-cut Applewood smoked bacon
1 bag Baby pearl onions
1 Bunch fresh Thyme
1 qt Chicken stock
Cut bacon into desired size pieces, we cut to ½ inch thickness and reserve.
Peel baby pearl onions and reserve.
Reduce chicken stock down to 1 cup with 3-4 sprigs of thyme. When reduced, whisk in ½ stick of butter. Keep warm as this is the finishing jus when serving.
Cut the potatoes in half, heat a large sauté pan to medium high heat and add olive oil and potatoes, keeping them moving in the pan and not allowing them to stick. Once they have a nice golden edge, add
the bacon pieces and pearl onions and continue to cook until bacon is rendered out and crispy and onions are cooked.
Heat another sauté pan for the chicken breasts. Season the chicken with salt. Add 2 tablespoons vegetable oil, when oil starts to smoke, add chicken breasts skin side down. Allow meat to sear. When they are golden brown turn over and add ½ stick of butter, garlic and 3-4 sprigs of thyme.
Place pan in a 350-degree oven to finish cooking for about 8 mins, remove and allow to rest.
Place roasted potato mixture on your favorite platter, add chicken breasts and serve with jus. Enjoy!
