Ingredients: 12oz 64% Dark Chocolate, Valrhona
7oz Heavy Cream
3oz Butter, Cubed
3oz 2021 Joseph Phelps Cabernet Sauvignon, Napa Valley
1 tbsp Espresso, ground
1/8 tsp Black Pepper
1 tsp Vanilla Extract
1/4 tsp Sea Salt
1/4 C Cocoa Powder
1 tsp Sugar
*Makes up to 32 truffles depending on the size of your scoop
Directions: Add the ground espresso, salt, ground black pepper to the heavy cream in a small sauce pot and bring to a quick scald not more than 180°F then strain this to remove the solids, pour over the dark chocolate chips in a bowl.
Add in the butter cubes while stirring this mixture until the chocolate melts smooth and shiny.
Next, gently warm the wine to 140°F, add into the melted chocolate, then stir well until incorporated.
Pour this mix into a bowl, cover with plastic wrap and refrigerate until cold and set for 2-3 hours.
Using a small scoop or melon baller tool, scoop out small round balls of the truffle mix.
Dip the scoop in warm water in between each to make the shaping easier.
Using the palms of your hands, roll the scoops into smooth ball shapes.
Roll these into the cocoa powder and sugar mixture in a bowl to evenly coat and enjoy.
