1995 Cabernet Sauvignon
Winemaker Notes The 1995 Cabernet is a powerful, extracted wine, with rich oak component underlying the spicy, peppery flavors. As the wine continues to evolve ut reveals cherry and plum-like aromas, rich, mature tannins, and the potential to outlive the excellent '94 vintage.
Winemaking Data Grapes were harvested at an average of 23.4° Brix, fermented to 13.5% alcohol, then aged 20 months in French oak (70%) and new American oak (30%), before being blended and bottled in August 1997.
Vintage Notes The 1995 growing season was more problematical than the '94, with an unseasonably cool spring and a hail storm on June 15 delaying bloom by ten to fourteen days and reducing crop levels. Veraison, which is usually complete by mid-August, lasted until early September, and vintners worried that the rainy season might arrive before all of the grapes were harvested. Fortunately, September warmed up and continued into October, and the ripening process was completed.

This tightly wound California Cas is definitely one for your cellar. It's a touch earthy and leathery, but the core of currant, berry, cherry and spice flavors is rich and focused, finishing with a long, lively aftertaste.

The 1995 Cabernet Sauvignon spent 16 months in cask (primarily French oak) and was bottled with minimal filtration. It exhibits a dark ruby/purple color, as well as an attractive black cherry, cassis, and dried herb-scented nose with spicy oak. Rich, full bodied and concentrated, it offers plenty of cassis fruit and a chewy style. (Dec. 1998)
