1990 Cabernet Sauvignon
Winemaker Notes This wine contains the classic structure, balance, and rich fruit flavors we would expect of a Napa Valley Cabernet Sauvignon.
Winemaking Data Grapes were harvested at an average of 23.3° Brix, fermented in stainless steel tanks, and aged 16 months in 60-gallon French oak barrels before being blended, fined with fresh egg whites, and bottled in late July 1992.
Vintage Notes The 1990 growing season was characterized by warm days and unusually cool nights, providing optimum conditions for photosynthesis and grape maturation. Fruit ripened slowly and steadily and, from a production standpoint, the pace of the harvest probably contributed as much to the overall quality of the vintage as the near-perfect condition of the grapes.
