1988 Cabernet Sauvignon
Winemaker Notes The wine offers a bouquet of cassis and cherry, with Cabernet Franc component giving a hint of tobacco leaf. While approachable now, it will most likely reward those patient enough to cellar it for a few more years.
Winemaking Data Grapes were harvested at an average of 23.1° Brix, fermented in stainless steel tanks, and aged 16 months in 60-gallon French oak barrels before being blended, fined with fresh egg whites, and bottled in September 1990.
Vintage Notes The 1988 growing season was a curious one, with warm weather causing early bud break, a spring hail storm reducing the cluster count during 'set', and overall crop yields that were down about 20%. The good news is that the smaller berries and reduced crop resulted in more intense fruit flavors.
