1985 Cabernet Sauvignon, Backus Vineyard

Winemaker Notes A distinctive chocolate mint note dominates the black cherry and currant flavors. It's rich and fairly tannic, requiring a few years of cellaring. The finish displays the concentration and structure that bodes well for aging.

Winemaking Data Grapes were harvested at an average of 23.0° Brix, fermented in stainless steel tanks, and aged 14-16 months in 60-gallon French oak barrels before being blended, fined with fresh egg whites, and bottled in July 1987.
