1981 Cabernet Sauvignon
Winemaker Notes The 1981 Cabernet Sauvignon is very aromatic when first opened with notes of chocolate, licorice, berry, cedar and pepper. It's lively acid, good fruit, and medium body carry through to its mature finish.
Winemaking Data Grapes were harvested at an average of 22.7° Brix, conventionally fermented, and aged 16 months in 60-gallon French oak barrels before being blended, fined with fresh egg whites, and bottled in August 1983.
Vintage Notes Despite the record-breaking warm temperatures of the 1981 growing season throughout the entire North Coast, we encountered virtually no over-ripeness in the Cabernet Sauvignon harvested that year, either from our estate-owned or contract vineyards. Indeed, the average sugar at harvest for this year's Cabernet Sauvignon was slightly less than that we obtained in the cooler 1980 vintage. If the warm weather had any effect on the fruit, it most likely accounts for the significantly lower tannin level in the wine. The flavors are rich though not intense, the aroma more of fruit and less green olive, and the finish is softer than any Cabernet Sauvignon we've made since 1974.Shop Current Releases
