1981 Cabernet Sauvignon, Backus Vineyard
Winemaker Notes We produced only 700 cases of Cabernet Sauvignon from the Backus Vineyard in 1981, down significantly from harvest levels in previous years. The steeply terraced, bright-red clay soil vineyard doesn't yield a particularly large crop but what comes out of those vines is always remarkably high quality. This is the first separate bottling of Backus Vineyard since 1978 - both 1979 and 1980 vintages were included in our Insignia - we think it is sufficiently distinct to have kept apart. Like earlier versions, it is a soft wine and it has a marvelous aroma of mint and fresh cherries. A first-rate bottle.
Winemaking Data Grapes were harvested at an average of 23.7° Brix, conventionally fermented, and aged 15 months in 60-gallon French oak barrels before being blended, fined with fresh egg whites, and bottled in July 1983.Shop Current Releases
