How To Make Fresh Ricotta

2 qt milk
2 cups cream
1 oz lemon juice
1 oz champagne vinegar
1 teaspoon salt
1 teaspoon sugar

Bring milk, cream, salt and sugar to a boil. Turn off heat and add vinegar and lemon juice, The mix will curdle, and that’s okay. Let sit for 25 mins then drain through coffee filters and a sieve. Refrigerate overnight. Voila!

A fun and easy recipe to add richness to pizzas, lasagna or salads. Stay home and enjoy.
