The 2018 Ovation Sparkling Wine, with its crisp acidity and delicate bubbles, is perfectly complemented by the rich flavors of caviar, the creamy tang of crème fraîche, and the buttery sweetness of brioche toast. This simple yet elegant combination is sure to impress.
In a small bowl, whisk the crème fraiche until thick and creamy. Add in a pinch of grated lemon zest and ½ tsp lemon juice then set this aside.
Trim the brioche slices into 4 squares, lightly toast both sides in butter in a pan. Remove and allow to cool. Spread the lemon crème fraiche over the brioche toast, top with a spoonful of caviar, garnish with chopped chives and enjoy with a bottle of JPV Ovation.
